I would really appreciate any information on the the following fixture
EVL Pro Spot 250
I've tried to add a photo of one, but can't seem to do that
I've done the usual Google search for manuals but not been able to find anything

The best you can do is try if one of the following existing Fixture Definitions will match:
Chauvet Intimidator Spot 250
FutureLight PHS-250
Martin MAC 250 Krypton
Showtec Phantom 250
These are all 250W Moving Head Spots with 14 channels.
Just use Simple Desk to find out which of the profiles comes closest and then use the Fixture Definition Editor (https://docs.qlcplus.org/v4/fixture-definition-editor) to solve any differences.
For channels like Pan, Pan Fine, Tilt, Tilt Fine, Pan/Tilt Speed and Master Dimmer you only need to find the channel number.
For Color Wheel and Gobo Wheel you need to find the matching ranges for each color/Gobo.
And then you need to figure out what the remaning channels do.
