Best Multi-Touch Touch screen/OS/Hardware Combo - Your thoughts

Hi there,
I currently run the wonderful QLC+ on a Win7 PC (Acer Revo) and use a plain old VGA monitor and a Enttec Open USB DMX,NEXTEC Afterglow Slim compatible controller from bitbang.co.uk.
What I'd really like to do is put together a Multi-Touch Touch screen rig with a bare bones PC and continue to use the same USB Controller.
I'm quite tech savvie so not overly concerned if I have to switch OS to Linux (and I do have a Mac Mini knocking around if I need it) but does anyone have thoughts on the best hardware/OS combo I can go for ? It's mainly used for live gigs with about 8 fixtures of mixed abilities.
I would be very interested in your views - Let's assume a reasonable budget but I'm not overly concerned with that !!!
