When working with scenes, how do I disable/enable channels? (Windows 10)

With the + button on the left side...
then select this fixture and modify its values?
Isn't this obvious? If not then there is a conceptual fault in the interface?
All electric machines work on smoke... when the smoke escapes... they don't work anymore

I think you need to wait for the user manual then.
I can't explain every button to every single user.

Here is what I figured out so far (screenshot attached). There is no blue selector to disable/enable above the channels. What am I doing wrong? How do I get those blue selectors to show up?

What your screenshot shows is the fixture view. (It shows the capabilities of it enumerating its channels.)
On the right side, there are the functions (or scenes we called them). Click on that and now you're able to en-/disable channels in our function.

OK so I have that much down. My next question: In 4xx you can copy and paste seting from one fixture to the others. In the example shown, I want to copy the settings of 18x12w Par #1 to the other three. Or set all four at once. How do I do that? There is no keystrokes for copy and paste, and no copy and past or paste all icons like in 4xx.
