I have a Behringer X-Touch, but the motorised faders are so noisy, I can't use them, and will have to turn them off.
I'm thinking about a Mackie MCU instead, but it's not listed in the inputs options. Does this mean I can't use it with QLC, or can I set it up as a Generic MIDI device and use that?

As long as you only use the Auto Detect option, you can use any MIDI device without an Input Profile.
If you are willing to spend some time on it, you can create your own Input Profile for the Mackie.
