Ask a generic question about the usage of QLC+, not related to a particular operating system

Created my Fixture that has 50 channels using "Generic"
How do I rename the 50 channels from "Dimmer 1" through "Dimmer 50" to something meaningful?

You double click on the name and you change it?

In the Fixture definition, if I click on the name it does not allow me to change it. Where do I click on it to change?

Aah ... in fixture definition... sorry
Open the file with a text editor and change.
Be sure not to disrupt the structure or you will break the file.

You can edit the name of the fixture but not the name of each individual channel on that dimmer.
I always add single-channel dimmers so that I can set the names of each one.
In your case, when adding the Generic fixture, you could set Channels to 1 and Quantity to 50.
