Hello, I have created a fixture definition for the Showtec LED Par 64 Short Q4-18.
Question 1:
In 8CH mode the red channel has different functions, depending on the value set in channel 7. I have set its group as Intensity (red colour) as I assume it would be its main use, but the validator wants me to set it as Speed (which is just one of the four possible functions). Should I really set its group as Speed to pass the validation?
Question 2:
There's a strobe channel which just sets strobe's speed (it has no shutter features, like opening or closing the shutter). I always set this kind of channel as Speed and not as Shutter, because otherwise the 2D visualiser wouldn't work properly (it shows a turned off fixture as if the shutter was closed if you're not strobing). Should I really set it as Shutter?

I think both of your problems are addressed in QLC+ 4.12.0, which is not yet released. You can use the current GIT version though (which is 4.12.0 in a development version).
Question 1: You'll want to use aliases (see Section Aliases in Massimo Callegari's post here: viewtopic.php?p=52957#p52957). Just create two or more channels ("Red" and the secondary function / functions) and add only the "Red" channel to the mode. Then add aliases that tell QLC+ to replace this "Red" channel with another one based on channel 7's value.
Question 2: I think Speed is okay. If the 2D preview shows it correctly, it can't be too wrong, after all
You can use capability presets (see Section Capability presets in Massimo's post again) to help QLC+ recognize a capability's real world function though. There are a lot of strobe related presets that would be applicable here.
