Map Midi CC -> Matrix Hue?

Hello,
Sorry if this is a dumb question. I did some searches and didnt find the answer. Is it possible to receive a Midi Continuous controller (value = 0 - 127) and map that to the hue of an entire pixel matrix?

MidiCC = 0 -> Pixel Matrix is all red (Hue = 0% = 0/127)
MidiCC = 42 -> Pixel Matrix is all green (Hue = 33% = 42/127)
MidiCC = 84 -> Pixel Matrix is all blue (Hue = 66% = 84/127)

...and all hues in between, such that moving the midi controller through an entire excursion (0-127) causes the Hue to smoothly go through the entire rainbow?
